Ingredients
2 slices bread
Your favorite melting cheese, Wisconsin Cheddar, Swiss, Mozzarella, Gouda, or Monterey Jack
Butter or margarine

Directions
Heat skillet over medium heat. Spread margarine or butter on the outside of the bread slices. Place cheese slices in between bread. When skillet is hot, add sandwich. Cook until bread is a medium brown. Flip sandwich, cook second side until browned. Remove, eat warm, and enjoy.

I sometimes put sliced jalapeno peppers or salsa on mine to spice things up a bit Try some Bleu Cheese crumbles or pizza sauce. How about some grilled onions or crispy bacon? You get the idea. Be creative!

Some say these taste best when cooked in a heavy cast iron skillet. I think that's because that's the way your mother used to make them, and what doesn't bring back childhood memories like a grilled cheese sandwich. Ooh, a grilled cheese sandwich with tomato soup.
