Jessie's Potato Bake

Ingredients
2lbs frozen hashbrowns (southern style)
2 cans cream of mushroom soup
3 tablespoons chopped onion

Directions
Mix above then add
2 cups sour cream
1 1/2 cups white cheddar cheese (I prefer cracker barrel for better flavor)

Mix well

grease large casserole dish and bake for 1 hour at 350

OPTIONAL:
If you want to top with corn flakes (gives extra crunch) Melt 1 stick of butter and enough corn flakes to cover the casserole

Top casserole and bake as above

(This makes a lot so you may want to cut recipe in half. Unless you like leftovers!
