Ingredients
3 large onions, sliced into 1/4 - 1/2" rings
Butter
2 cups shredded Swiss cheese
1 can cream of chicken soup
1/2 cup milk
3 tsp Soy Sauce
1/2 tsp pepper
Baguettes or croutons
Directions
Saute onions in 2 tbs butter until well browned
Place sauteed onions in greased 1 1/2 quart casserole dish (8 x 8)
Sprinkle shredded cheese over onions
Mix soup, milk, soy sauce and pepper, pour over onions and cheese
Cover with 1/2" slices of baguette or croutons
Bake 30 minutes at 350 degrees
Serves 6 - 8
Notes from Kurt:
Double batch: use 6 large onions and saute them until quite brown.
I don't make rings; halves sliced top to bottom into strips works better for me.
I use a 9 X 13 baking dish for the double batch.
I asked Kurt how he serves this and here is his reply:
A great winter side dish for most anything.....my buddy from Watertown likes it with mashed potatos.....or it makes great Hors D'oeuvres just plain. Even people who hate onions love it!
