Garlic Meatloaf
Ingredients
3lbs. ground beef (I sometines use half pork and half beef)
2 1/2 large cloves garlic, minced
1 green pepper, chopped
1/2 large red onion, chopped
1 1/2 cup bread crumbs
2 eggs
1/4 cup shredded Wisconsin Colby cheese
4oz. crushed tomatoes
1pkg. store brand meatloaf mix

Directions
Heat oven to 400 degrees
Mix all ingredients well, and form into appropriately sized baking dish (I use glass)
Cook 1 hr. without opening oven door
Spread ketchup on the top of the meatloaf
Bake an additional 30 min.
It should be cooked through and have a nice brown crust
Mashed potatoes are a great side dish!!
I love cold meatloaf sandwiches!
